I believe it comes from the fact that the place she wishes to send me to has a rather large population of elves. My own thoughts on the matter are trivial at best.

They're quiet strange in my opinion. Apparently the odd coloring of their eyes is caused by high levels of concentrated magic. I spoken to several Blood Elves who confirmed this as fact.
