Saying you would "kill for a Rei" seems a bit extreme, does it not? I am sure all of us would appreciate having her there -- save the Second, perhaps -- but regardless, relax. If the desire is there, it will happen. You do not need to consider anything so drastic.
And on that note, your thoughts of canon updating to the Rebuild timeline seem...cruel. I cannot stop you, if that is what you choose in the end, but do consider the feelings of everyone else that would be affected first.
